Middle-way between golden and noble rot berries
Just like the 2000 X-Taste, the X-Mûr originates from late harvested grapes in our plots of Climat « Les Quarts » on October 22, 2001. Contrary to the naturally dessicated grapes of 2000 (dessication on the vine), those left on the vines in 2001 were rapidly and entirely transformed by noble rot (botrytis cinerea). The juice produced had very high sugar content (330g/l as opposed to 220g/l for juice unaffected by noble rot), but less so than for X-Taste. We bottled X-Mûr 2001 in March 2004 and decided to leave a certain amount of CO2 (gaz) at the end of fermentation, to go with the 90 g/l of residual sugar.
