Authentic and natural cuvées
This is the third year that we’ve produced « Zen » versions of several of our white wines, with no added sulfur until bottling. The total added sulfur for the ‘Zen’ cuvées is only 20 mg/l, as compared to 40-50 mg/l for our classic Soufrandière and Bret Brothers cuvées, which is already very low. For white wines, Demeter allows up to 90 mg/l total, organic wines may have up to 150 mg/l, and non-certified wines up to 210 mg/l.
The « Zen » wines are, thus, more open and expressive. They vibrate with an almost magical energy. We took even this further in 2019 and vinified all of our reds with this same « Zen » philosophy.
