Version Beta 1.0 and 1.1 of our Bien-Venu did not fit the « standards » apparently to gain « agrément » as a Beaujolais-Villages. « Bien-Venu In X-Tremis is the blend of our 2006 and 2007 vintages ! The yield is very low (20 hl/ha) from grapes that are hand picked. Whole berries are partially crushed then macerate for 2 to 3 weeks. Then we get the free-run juice and press the grapes. The then assembled juices continue a slow maturation in barrels for 11 and 18 months. Such an aroma! Such a racy wine ! A long story…In X-Tremis !
