Vinification and Ageing

Hand-picked grapes, whole berries pressing, 100% vinified and aged in oak barrel (of 228 liters each) for 11 months + 6 more months in tank for a natural settling.

As for our vines in the Climat « Les Quarts », our plot « Les Longeays » faces South-East in mid-slope, but the soil is deeper. That character gives early maturity to the grapes here, year after year. Great ageing potential!
